Other: Deck Rigging

I'm well into my first Kayak. Had great training under Nick at the Wooden Boat School, but we did not get to cover anything beyond stripping and glassing.
Question is: What are the best tried and true methods of installing deck fittings? The Maroske (tubing through the deck) process looks good, but I see variants of that. I've seen ETs photos, but can't figure out what the material is that's in the wood through which the tubing passes.
BTW - I love this work! The last woodworking I did was in Grade 7 (I'm 63) and that napkin holder got a C. I make stained glass lamps, but boatbuilding has me hooked now.
