S&G: NS IO build

Seems like the forum I usually visit is dying off, so I'm going to start posting here. I am building Nick S's IO. He has nicely provided me (for a small fee) a huge printout of this boat. At this point I have three more pieces to cut out before I actually start the Stitching and gluing. Essentially this is my starter boat. I have a fishing kayak, but I want something with a bit more possibility. So to prove to the wife I have the chops, I am building my daughter this IO.

I am going to keep it pretty standard, but I am thinking about adding a day hatch. One it's just a cool little add on, and two practice. I also am trying to thing of how to add some flotation to this thing. I have two thoughts:
1) mesh "bulkhead" attached with some SS hooks to hold in a bunch of pool noodles or homemade float bags
2) iron cross style plywood bulkheads.. Same purpose.

Thoughts?

Second question, how do you glass this thing?? What order, there are no forms for it.
