To my knowledge there isn't much in the way of skin-on-frame canoe plans. If there are any I would examine them carefully. Canoes are bigger, have to carry more weight and don't have a deck structure to stiffen them.
Here's a guy that is building one using a stripper mold. It's a difficult method but his outcome looks good and his pictures can give you an idea of how many pieces are involve and how he sized everything.

Also there is a good sequence on building an SOF canoe in Robert Morris's "Building Skin on Frame Boats" but the book is out of print and and cpies cost so much almost nobody refers to it any more.
