What about a Sea Island Sport? *PIC*

It's the only commercially available S&G SOT that I know of. 48 pounds isn't that light but should weigh less than plastic ones it's size.

Beyond that I'd consider a sit-in kayak with a large cockpit or a double-paddle solo canoe.
