It's a nicely built boat but the success or failure of the combination depend on the ergonomics.
If the pilot lays in the bottom with her feet over her head her legs may go numb. If there is some kind of raised seat to give the pilot a more comfortable posture when peddling it may raise the center of gravity to the point of instability.
Ask the pilot if she can click off a five mile peddle without getting a cramp.
