I built a motor boat with mahogany some time ago – it's tough, brittle stuff not suitable for kayaks in my opinion. usually you only get the bone dry stuff that will need to be presteamed to make sure it won't brake when bending. It's also prone to cause a lot more injuries than WRC.
Haven't tried basswood but I'd guess it'll be easy to work with – however its rot-resistance is pretty low.
