You mean like this ?

I only used the all-plastic cable ties for a trial assembly; pulled them only sufficiently tight (with a pair of plain pliers) to hold the chines and inwales in place temporarily; could have hauled the ties tighter but as it was, they were slightly cutting into the edges of the (soft) WRC timbers. As the ties were only to be temporary, the eyelet end and long tag are on the outboard side of the timberwork to make cutting off easier.
When satisfied with the alignment and set-up, I glued and screwed the longitudinals in place with a second lot of ties.
When the epoxy glue had set, removed the screws and drilled and dowelled the connections.
If I were to build another SoF, I would probably use just synthetic sinew and lash the assembly. Lashing has an advantage in than it can be done progressively with breaks for afternoon tea or lunch without a glue problem !

If one anticipated a relatively short used-by-kids life for the kayak then maybe just stapling the skin on would be OK

Great idea - the Grandparent/Grandchild build program.

Too early for me, my only grandie is 5 months old !
