If it's real wood then I suspect they're using 3D veneer – that stuff is mainly used in furniture making for complex curved chairs etc.
It's a very thin veneer that's made flexible with chemicals, heat and steam. Not really an option for any of us I guess as a large heated press is needed to get it into shape…
But apart from the look, I don't think it adds anything to the boat anyway.
