My next question would be, Should you add some glass to the layup to improve the flexibility and keep the boat from being to stiff and prone to cracking. Carbon fiber alone is brittle.

I don't think that's entirely true. One of the great advantages of carbon is the ability to absorb energy and flex without breaking. Carbon bikes are very stiff yet flexible (hence a lot more comfortable too). If you look at the high end carbon racing catamarans, they actually bend a lot (and the "cracking" sound of it is scary).
The reason for brittleness usually lies in a bad laminate: cloth flowing up on the resin or simply too much resin. Many people think that the epoxy adds strength to the fiber but that's not true - it's sole purpose is to hold the fibers in place and transmit forces, so what's more important is a close and strong bond within the laminate. So the goal is a minimal amount of resin that just about covers each fiber. If you have a thick layer of resin in your laminate then this will eventually become brittle and break, also tearing apart the fibers.

A good reason for adding glass on top of a kevlar/carbon cloth would be the improved workability (sanding!). Esp. Kevlar is hard to laminate (saturate), so having a glass layer on top would also make sure the kevlar is fully encapsulated in resin. However, it would also increase weight. there are some very low weight glass cloths available (1-2OZ) and I might give it a try one day.

There are quite a few fiber combos out there, X cloth and hybrids but it seems that they would be in addition to a standard fiberglass cloth.

It's a different story if you're working with foam instead of wood. If you use a plug for lamination using gelcoat you will often need a fine cloth on the outsides to avoid print-through of the cloth structure.
I believe wood is a superior material and try to turn it into an advantage that it can't be used on a large industrial scale. I think wood can still compete with todays oil-based high end materials that cost as much as gold…
