Skin-on-Frame: Updating a vintage kayak

A while back I aquired an older canvas covered kayak. It's unusual as it has aluminum frames (very similar to TV attenna vanes) attached to the wood ribbands and a plywood floor. I tend to think it was orginally a kit? I need to remove the torn canvas with numerous coats of paint. The questions are:
1. Should I replace it with canvas or other updated material such as heat shrink Dacron. I've also heard of something called Xynole.
2. What is the better material considering ease of use, cost, durability.
3. What should I use to coat or seal the material.
4. I'd also like to paint it, regualr marine paint?
5. Lastly if you could recommend where to purchase the materials and find instruction on it's application.
