One thing that can help is to tint the varnish with some artist oil paint to match the color more closely.
Also, when you do a repair, how does anyone know what exact grit and sanding finish they had prior to the original glassing. The more coarse the sanding, the darker the color. Then as you said, the varnish and epoxy gets darker with age.
