Yes, the advantage of a deployable skeg is being able to adjust it to trim your kayak to your paddling advantage considering wind and wave direction.

But if you want to avoid the problems of a deployable skeg jamming at the wrong time, adding a fixed skeg to trim your weathercocking kayak is the answer if you cannot move the seat back. And adding too much skeg will create a kayak that leecocks. Of course, it is easy to file down a skeg that is too large, just do it before you get caught in an offshore wind and find yourself unable to paddle toward shore.
