Nick also gives a little more info on the website (at the bottom of this page: http://www.guillemot-kayaks.com/guillemot/kayaking_information/products/books/_stripbuilt_sea_kayak/changes_and_corrections) which gives a starting point from which you can adjust for the kayaker's weights as described on pg 187.

Thanks so much for your help. This is exactly what I was looking for, now I can continue lofting with the knowledge of where the cockpits are. I am building this double for my son who has very large feet and I want to bump the deck up to give him the room he needs.
