Skin-on-Frame: 8ft Sea Flea for 75lb paddler

I've been taking my 7 and 4 year kids kayaking in a tandem perception kayak over
the past year. They both love it, and my daughter is ready for her own kayak
now. My problem is that I drive a Mustang, so I cannot cartop anything more
than the tandem. To get around this problem, I've decided to build an 8' SOF
kayak that I can slide inside the tandem for transport. It has a huge cockpit,
and I can remove the front seat.

Anyway, I'd like to scale down the Sea Flea to 8', and perhaps add a bit to the
width. This way, it will be suitable to my daughter (45lbs now) for the next couple of
years, until my son is big enough to paddle, and I'm forced into buying a
trailer for three kayaks.

Here are the updated offsets and spacing that I've come up with:

I've basically made it 2 inches wider, added .25 inches to the dead rise, and .25 inches to the height between the chine and the gunwale. I'm thinking I may need to add more depth to accomodate 75lbs on such a short kayak. Also, I'm wondering if the gunwales will bend that much?
I know a couple of people here have built micro sea fleas, but they were targeting a smaller paddler.

Note: I would do a folder, but this is my first build, and I'd like to keep it as simple as possible. Also, assembling a folder with two kids bored and anxious doesn't seem like a good plan. I am not concerned about speed or rolling either.
