I paddle with a guy here in Minnesota who did that very thing on a Cape Ann Storm. He hinged the hatch on the bow end and made a latch similar to the hood latch on a car. The release cables are in the hatch so he can open them from the cockpit, again simialar to a car hood release. He even spring loaded the latch to the hatch would pop open. Just make sure it is secure so it doesn't open at sea!
