I might have avoided smell in the house from the epoxy but I finished the kayak with two part polyurethane which is a more serious issue. With the fans I didn't smell a hint of it elsewhere in the house, and it is powerfully smelly stuff. I have on other occasions used solvents in the same part of the basement, and received complaints from the other half about smell elsewhere, so I know that in our house the two part polyurethane application to a kayak would have been a serious problem without the fans.

more or less on the topic of applying smelly stuff in the house, for breathing during application of the polyurethane, I hooked up a respirator to a plastic pipe normally used for sump pumps, and put the intake end outside the house through a second window. A normal organic vapor cartridge hardly touches the odor from the that stuff. The plastic pipe was a bit of a pain to drag around during the work, but it did the job if somewhat inconveniently. If I do another kayak with this finish, I will rig up a pressurized air supply, likely using a hydroponic air pump. That way, a small diameter air tube can be used which would be more easily moved about. OTOH, one could just buy a supplied air respirator system, but they are expensive.
