Aaron-
Do you have the facilities (space, table saw with (improvised) outfeed table, perhaps thickness planer, etc) and inclination to saw your own strips?
If the only problem is milling the bead-and-cove edges, then I would suggest ripping your own strips and bevelling the edge as others have suggested.
If you need to buy strips 'anyway' then either B&C or bevelled strips will do.

B&C strips are great for canoe-building (IME) but the tighter curves in kayaks have caused me problems getting tight joins.

Also, if you have 'work of art' standards in mind for your project, you will probably want to get some full-length strips, as it can make color-matching and continuity easier. You can make an attractive (IMO) and perfectly functional boat using strips ripped from 8' stock.

Just some thoughts for the 'mix'.....
