If you look around the web you should be able to find lots of boat 'lines', similar to:

Google images can get you to this sort of stuff quickly.

Not accurate enough to build the boat, but plenty good enough to make something to hang on a bar wall, IMO.

A quick search on 'building half-hull' will get you the basic techniques. Essentially you stack together boards cut to the appropriate shape and then fair the result into a boat-like object.

Use an even/fine-grained wood like clear pine, basswood, or mahogany for the half-hull.
Screw it to an attractive backing board, add a brass plate with the boat details, and you are ready to hang it on the wall.

When I was mid-way through my sailboat-building project, I spent some winter weeknights making a half-hull model. I've swallowed the anchor and sold the boat, but still have the half-hull. It stirs some pleasant memories.
