In calm conditions you should be ok with your plan. You are correct that more weight forwards should make the stern move faster than the bow downwind and so weathercock,
but if there are waves the kayak will turn side on to the waves anyway as the wave hits the bow first pushing it in front of it until level with the stern and then pushes equally along the whole length.
Only if you hold the bow straight into the wave will that not happen.
