I haven't heard of the soldering wire trick.

The method I used for getting out a stem shape was similar in principle to your "almost" method: I made a bunch of thin "pointers" with slots and bolted them together, then slid them into contact with the outline of the stem and tightened the bolt. It did the job but it was very fiddley; your method sounds easier and more accurate.
