The CLC Kaholo would be ideal for fishing and with stitch-n-glue you could opt for a stripped deck. It is a very stable platform based only on the images. I have not tried one but the thing is a tank! One need not be a nautical engineer to see it will be a stable platform. It's not terribly wide but the width carries all the way to the tail. The wide tail is going to give you huge stability. Honestly it looks a little clunky to me for paddling around on, but for what you're looking for it may just be the ticket.

Most of the designs out there for wood SUP's are either surf, race, or flatwater paddling. A fishing SUP is a specialized thing because it is big, wide, and clunky, and typically they are specific designs just for fishing- too big for surf, too slow for paddling around a lake. That said, I have often thought about doing up a design for a fishing SUP. I just don't want to build a prototype for one. I am currently building the prototype for the Bullet racing SUP that I designed for Wood Surfboard Supply. It is narrow and fast, and very tippy. Just the opposite of a fishing SUP, but I gave some thought to taking the same design, widening it, and making a fishing platform using a similar basic hull design. (This is a displacement hull design)

Tell me more about your expectations. Are you looking more to paddle around and every now and then go diving for abalone, mostly for the thrill of it and not to load up your board with them, or are you looking for a platform that can hold a cooler and some gear? I could see a cooler strapped to the Kaholo. Heck, I could almost see a center console on that thing! Maybe a Bimini! LOL
