I did the same basic thing putting built up wood hatches on two Yost SOF's now, works fine, adds a bunch of weight though which I have a problem with, specially on such a light weight boat.

Put one set on a friend's 17' Sea Tour last year and another on the rounded bottom Sea Bee that I did a few years ago. On them they have plywood hatches on plywood sub decks and plywood recessed rings. Both of those have bulkheads too btw.
