Thank you all for your enlightening comments and suggestions. Being in Colorado, my wife and I will be using these boats on lakes and reservoirs, not likely to be encountering many rapids, falls or surf. Submerged rocks, maybe, if we should get frisky on the water, not likely.
I think I will go with the 1678 style and double up on the hull with an additional layer at the stem and stern.
