Wooden kayaks/double paddle canoes were built for a long time without epoxy. You could research Ashcroft construction, or the way Rushton built many of his boats, or lapstrake, etc. And, recently, Tom Yost built a stripper version of his SOF Sea Bee, without using any fiberglass:

He did use epoxy for the glue, but you could substitute resorcinal, PL premium construction adhesive, etc.

I like the chine log idea for a plywood kayak, too.
