It's basic chemistry. You burn hydrocarbons and you get carbon dioxide and water. With unvented heaters, the water ends up in the space with the heat. You won't normally notice it since the increased temperature changes the amount of water that the air can hold but you can get a lot of condensation on cold surfaces (uninsulated exterior walls, for example).
