Nick's calculator: http://www.guillemot-kayaks.com/guillemot/blog/nick/strip_planked_boat_material_and_weight_calculator will estimate the amount of epoxy you will need. I had a similar experience to Ian's with my first build (6 oz cloth on a Great Auk ended up using about 2.25 gallons epoxy+hardener) but using 4 oz cloth would have reduced that significantly. I also agree that you probably won't regret having leftovers.
