Here's what I have done.....
Recess to bottom of coaming ring - 3/4"
Coaming ring thickness - 1/2"
Recess to top of coaming ring - 1 1/4"

I make my riser strips 2" long and glue them to the side of the recess opening. I use a small dot of hot glue to glue the riser strips to the recess and use Titebond III to glue them to each other. That will give you about 1/2" of riser to trim off after you have installed the rim.
