I'll humbly submit that the Chuckanut 12, or even the C15, will float you fine, and are definitely stable enough for fishing, etc. Non-traditional construction, free plans . . . .

Also, I've recently scaled up my Disko Bay for larger paddlers (the big version I'm calling the "Disko Dreadnaught"), but it's long.

SOF construction is already cheap. You can typically substitute MDO plywood for marine plywood, if necessary, and save a few bucks. At your size, I wouldn't be skimping on wood quality, though. There's not very much of it, and it has to support you!
