If you don't want separate pedals, make them one piece right across the cockpit and set up the angle to suit (no hinges).

They are usually fitted into plywood S&G kayaks but yes, I did fit a set of rudder pedals using this system in a Klepper. The owner, Brian Roberts, went on to buy a glass boat and circumnavigate the South Island of New Zealand, solo, unassisted. A decade and more later Freya did the same trip with quite a bit of assistance. Brian left NZ and went back to the USA and paddling in the Rocky Mountain Sea Kayak Club ....
