Don't cut it up. It's too nice. You're done building it. Just let it be.

I have a Night Heron that was altered with comments from the designer to a similar aft deck to the GS. I like it. When I first finished it I had some of the same concerns you did, and I talked to some super high-end paddlers who had the GS and they assured me that it was fine, and sent me photos to prove it. The GS actually has more freeboard than some other designs, it's just that people aren't used to seeing kayaks with that little freeboard.

Paddle it for a while before you decide. If you feel like you need a boat that performs differently for the conditions you paddle, then build that boat. In the meantime you may come to like your GS. Or- you may get the new, "perfect" kayak done and find that you actually like the GS better anyway. If you paddle the new boat and really think you don't like the GS, then by all means, sell it. You did a fantastic job, it's got great hatches, someone will buy it and likely pay enough to build a couple more kayaks.
