Malcom is trying to give you a quick tutorial on kayaks but it's too extensive a topic to cover on a forum such as this.
You are obviously a neophyte and as such inclined to make judgements on insufficient evidence. You need access to some books on the subject and some time spent paddling before you spend any large amounts of money.
In general any kayak suitable for open water paddling looks similar to a Inuit style kayak. Either hard shell or skin-on-frame. That is because they give you the most distance for the least effort and are the easiest to control in a variety of wind and weather conditions. If you are worried about sinking there are various ways to make a standard kayak unsinkable.
Inflatables have never made much impression in the kayak market and I don't think that will change anytime soon.
