A rolling bevel is a bevel that is not a constant angle. You may have a bevel angle that works on the deck perfectly and as it runs on to the back deck the angle may be more severe - that's a rolling bevel. There's not a lot of rolling bevels on a kayak. Usually along the side of the front deck to the back deck. Almost all of the front and back deck get broken by the cockpit opening. And the hull is fairly consistent. So, it's not something you are doing all the time. I strip with flat edge and find it easy and enjoyable. You can try both and make a decision for yourself. There's no rule that you have to do an entire boat one way. When I'm through cutting strips I've had enough preparing of strips.
