S&G: What to build

I'm researching my first kayak building project. I'm 5'9 and 180#. I've looked at many designs and I think I want to build the imaginary Coho LT, someday to be offered by Pygmy. Until then I'll have to consider boats that are actually available.

Some of the entries I've read here are about great boats people have built that paddle great when they put 40 or 50 pounds in them. I think I want to build a 35# boat that doesn't need 40# to make it paddle right. I want to paddle straight at a pretty good clip without a rudder. Occasionally I have to paddle around an island or negotiate a state park and the ability to turn would be a good thing. I probably won't be spending the night anywhere so I won't need to pack an oven or a washing machine. I just need room for a jug of water, sandwich, camera and spare paddle.

I see there is a considerable amount of experience and expertise on this forum. I would greatly appreciate the opportunity to call on some of your wisdom to help me make as few mistakes as possible in this project.

They say you should pick a boat you like before you pick the plans. I'm liking the Oneocean Cirrus LT or the Shearwater Merganser 16. Does anyone have any suggestions about other plans available? I welcome any ideas or suggestions.
