Take a look around Bryan's site, he's got nice plans for a skeg.

Personally I think I'd not bother with it, a well designed boat shouldn't need one. The only boat I've got now with a skeg is the NDK Greenlander and I don't remember the last time I put it down.
(yes my memory is bad, but not "that" bad )
