Dye is alcohol based. Alcohol is a thinner for epoxy and works with it perfectly.

Oil will interfere with the epoxy adhesion.

Water based stains usually have latex in them. It's a lot like a super-thin latex paint. They suck. And they will interfere with the absorption of epoxy into the grain.
