For safety reasons, bulkheads will allow less water in the kayak on a wet exit. For convenience reasons, there is no fussing around with bulkheads when you want to go paddling. I have two identical kayaks. One has bulkheads and the other I use float bags and a seasock. I always use the kayak with bulkheads.
