The one naval architect I am familiar with, Jacques Mertens, always askes "what is you program?", meaning what are your personal requirements for this boat and how much are you willing to spend?
So the boat is to be 30' long.
Will it;
sail in oceans or lakes?
travel far from shore?
need to have bunks and how many?
need a flush head?
need a standup shower
be inboard or outboard powered?
What kind of construction do you prefer?
Plank on frame?
Strip?
Lapstrake?
Stitch and glue?
How much time are you willing to invest?
How much money?
Do you have a heated building to build in or is your climate mild enough to do it outside?
Are you aware that the cost of building a sailboat hull is about equal to the cost of all the rigging and the sails?
Etc.
Etc.
If you want to look at some S&G design of the size you prefer go to;

: I'm wondering what the feasibility is of building a large wooden sailboat?
: I'm talking something that is 30'+. Or is this something that is best left
: to fiberglass or metal hull? Are there any decent books on building larger
: sailboats? Perhaps I should be referring to a "sailing yacht"
: instead of sailboat.
