Beyond the obvious flotation you can install hatches. You're obviously a new paddler. Whenever I arrive to paddle with friends, the first thing that happens is everyone has their hatches open and are putting in extra clothing, some food, extra water and drybags with other stuff. You'll never regret having hatches: you will regret not doing it.

You don't need the bulkheads structurally.
