With ash and mahogany you have the full range of light and dark. Mahogany is pretty dark especially oiled or finished although it's reddish. Not much else darker that will stand out between two strips of mahogany other than ebony which is very expensive and hard. Dark or black walnut will be about the same darkness as the mahogany but more brown. You cold try staining a few strips?
