The edge of the end stem is usually the point where the strips from either side will meet. That means that if you are not using an internal stem, it needs to bevelled to form a V. If you are using an internal stem, it replaces the bit that needs to be bevelled.

That does mean that your strips will meet closer to the boat than they do at the moment. So you need to remove material from the end stem corresponding to the internal stem.
