Stephen, it sounds like you could use some advice from someone who knows the rigors of the trip you are planing. Jake Stachovak is now completing a trip down the Missisip from Wisconsin, along the gulf coast, up the Atlantic coast and through the Great Lakes back to Wisconsin. Along the river he had his gear stolen and was pepper sprayed by kids, not the cops. He also had some wonderful experiences. He gives a lot of details on conditions on the river and how to handle them.
So you might like to read the blog on his trip and maybe get in touch with him as to kayak recommendations and conditions you can expect to see.
