A few extra bits of advice I didn't see in the previous posts:-

If you are not yet a paddler then try out some boats - ask friends; some canoe/kayak outlets located on the water will let you try out a demonstrator and there are rental places as well. Mostly you will get plastic boats but it will give you some feel for how different boats behave under you.

Consider where you will mostly paddle: many folks like to go for the long boats but personally, being close to rivers and ponds with lakes a bit of a drive, i prefer shorter boats that turn easily.

The minimum tool kit for building a wood boat depends on the type of construction, so if let us know what you decide on we can offer more advice. I don't guarantee the advice will not be conflicting though.

Most important advice: do it!
