Take a look at production canoes, the seats are normally hung from the gunwales, easier this way to get the seat where you want it too and fairly simple also.

Btw, the canoe looks great, nice pictures too :)

I'd imagine that having the seat about half way between where it is now and the top of the gunwales will be about right, will be a little tippy but you can get used to that. I'm basing this on my production Wenonah Argosy which is really pretty similiar.
