Hi Tim,
I think the kayak you mean is called the Pursuit 80 DLX, that's the only one with a 200lb max.
And no, you wouldn't sink it, just put it a bit deeper in the water, maybe half an inch or less (?).
It might feel a bit sluggish when you paddle it but not noticably.
