Skin-on-Frame: Real sinew versus artificial- durability?

Good day all,

In preparation to build a SOF I found 20 feet of real sinew and thought it might be cool to build a yak with real sinew. I was wondering about shrinkage, rot, and other durability issues as this will be a user kayak- not a display item! I plan on it to see a lot of salt water and a lot of sunlight. Anyone out there see any problems with using real deer sinew?
