I epoxy the hatch lip in after attaching hull and deck. I want the opening as large as possible to be able to get in there while glassing the interior seam. If you've glassed deck and hull sections using spreader sticks to maintain the design width, there shouldn't be much if any distortion of the deck when you join them. But, if there is, you can heat-up the glass hatch lip until it becomes a little flexible and then spring-clamp it into the opening to let it conform to the new shape.
