Hi Rick,
I now have built and enjoy both the Guillemot and Outer Island. The Guillemot has plenty of rocker and a flat bottom near the cockpit. This makes the Guillemot very maneuverable and quite stable. The Outer Island is rounder in the hull as well as flat in regard to rocker and longer water line. Outer Island is lower in volume also. I find the strip built Outer Island is faster hull speed, stronger tracking but turns easily when leaned. The Outer Island is also quite stable.
I really enjoy both kayaks. I just use them in different ways.
I can't really comment on the Night Heron, yet. I hope this is helpful.
