Tools: Block Plane versus Adjustable Mouth Block Plane

I am building a Guillemot Double and in the market for a low angle block plane. My question is: Do I need an "Adjustable Mouth" block plane, or is a regular low angle block plane sufficient? I am willing to spend the extra for the adjustable mouth but I am uncertain if I need it. I am looking at the Lie-Nielson's planes specifically.
