Unless the epoxy is completely cured you do not want to sand it without using a respirator. Most epoxy isn't totally cured for at least a week, sometimes much more. Set up epoxy isn't cured epoxy.

Btw, after about a week it's alot easier to sand as it gets harder each day for at least a week if you have normal temperatures.
