The longer you can wait the better. Epoxy cures over a period of days given sufficiently high temperatures, and if temperatures are low it can take even longer. Don't put the varnish on until the epoxy is properly cured. If in doubt place kayak in heated environment for three days. I usually wait seven days (Saturday to Saturday) and have no problems.
